A handful of spinach, cut into smaller pieces
1 cup shredded cheese
8 to 10 slices of bacon
1 tablespoon of Dijon mustard
1 teaspoon of hot sauce
Salt and pepper to taste
- Preheat oven to 350 .
- In a small pan, cook and crumble bacon pieces then set aside. The eggs, hot sauce, Dijon mustard in a large bowl. Season with salt and pepper.
- Grease a cupcake tin. Spoon the egg mixture into each cupcake tin filling within ¼ inch from the top.
- Divide spinach, cooked bacon pieces, and cheese for the 12 cups. Add them into each cup. Stir the cup with a fork to make sure the filling is coated with egg mixture.
- Bake for 30 to 40 minutes or until edges starts to pull away.
