Parmesan Chicken Cutlets for HCG Diet Phase 1

Phase 1 is the gorging period of the HCG diet where you are allowed to eat anything you want. The purpose of the loading phase is to prepare your fat stores for the VLCD. Make a guilt-free and delicious meal to kick start your weight loss journey.

Ingredients:

  • ¾ cup of all-purpose flour
  • 2 large eggs
  • 1 and ½ cup of Japanese bread crumbs
  • 2 large eggs
  • ¼ cup of grated parmesan cheese
  • 1 tablespoon of mustard powder
  • Salt and ground pepper
  • 200 grams of lean chicken meat
  • 8 tablespoons olive oil
  • 1 sliced lemon

Cooking Procedure:

  • Place flour in a shallow bowl and beat eggs in a second shallow bowl.
  • In the third bowl, combine parmesan, and mustard powder and season the mixture with salt and pepper.
  • Season chicken with salt and pepper, then dredge in flour, shaking off any excess. Transfer to bowl with beaten egg and turn to coat.
  • Lift from the bowl, allowing excess to drip back into the bowl.
  • Place between pieces of freezer paper or waxed paper and freeze in resealable freezer bags make sure to thaw before continuing.
  • Heat 6 tablespoons oil in a large heavy skillet or a cast-iron skillet over medium-high heat.
  • Cook cutlets until golden brown and cooked through, about 4 minutes per side.
  • Transfer cutlets to a paper towel-lined plate and season with salt. Serve with lemon.
